My yummy dinner

OK I made the yummiest dinner tonight.

Tonight's menu:
Taco soup
corn bread
fruit punch
Cinnamon rolls



I got this recipe from Food Network, click the link to see it. It is a Paula Dean recipe. I was a little leery of the can of this can of that, but it was sooo good! My family said this one is a keeper mom. I only changed it up a little

I only used 1 14 oz can whole tomatoes, and 1 14 oz can of diced tomatoes. The only beans I did were Kidney beans and I used 3 cans. I put in a can of Ortega diced green chilies as well and I added 1 cup of water to it.
Otherwise I followed the recipe and let it go in the crock pat all afternoon.




cinnamon rolls
4 tsp yeast 1 cup warm milk
½ cup sugar 1/3 cup melted margarine
1 tsp salt 2 eggs
4 cups flour

Filling
1 cup brown sugar 1/3 cup butter
2 ½ Tablespoons cinnamon

icing
8 Tablespoons soft butter 1 ½ cups powdered sugar
¼ cup cream cheese ½ teaspoon vanilla

For rolls: dissolve the yeast in warm milk in the bowl. Add sugar, butter, milk, eggs, salt, and flour. Mix on 2 with dough hook
Knead for 3 minutes. cover and let rest for 1 hour
Roll the dough out on a floured surface till it is about ¼ inch thick. Preheat oven to 400

For Filling: Spread butter over dough, mix sugar and cinnamon. Sprinkle the sugar and cinnamon over the buttered dough.

Carefully roll the dough into a “log”. seal the edge with water. Cut dough into 1 ¾ inch slices. Place in a lightly greased pan. Bake for 10 minutes

While rolls are baking mix the icing up and frost the warm rolls.
Makes 12 rolls.

sounds great. I am going to try it. the cinnamon rolls look good to. not good at yeast breads though. shelly

The biggest trick is not getting the liquid above 110 degrees. If it is it will kill the yeast. I forgot to say in my post I did half fresh wheat flour and 1/2 white flour. The really were yummy

I should not have looked at this post. I'm sitting here starving after karate and those cinnamon rolls look like heaven!!! YUMM!! Can't wait to get closer to the holidays so I can bake like crazy! Trying to hold off for now :)
