Wheat Bread pic tutorialI found this recipe on the web sometime ago. I don’t remember where. It does use some white flour. I am sharing the original recipe. I don’t quite follow it normally, I did for this post. I have cut back the white flour to 2 cups and increased the wheat flour by 3 cups.
I grind my own wheat for this bread. I got the kitchenaid grain mill attachment.
SO I hook that up and fill the hopper with grain.
I fill it 2 or 3 times. I get enough to do at least 6 loaves of bread and then I add the remaining flour to other things so it dose not go to waste.
Wheat Bread
This recipe makes 3 loaves of bread
3 cups hot tap water 2/3 cup honey
5 cups white flour 1 Tablespoon salt
3 ½ cups wheat flour 3 Tablespoons melted butter
OK this one is a bit different than white bread. You want your wheat bread dough to be wet feeling.
So to start you need to put the water, 1/3 cup honey, and the white flour in your mixing bowl. Let it sit for 15 minutes so that it starts to get frothy.
Then add in your salt, wheat flour, melted butter, and your other 1/3 cup honey.
You want to mix this in your heavy duty mixer on the “2” setting with the dough hook.
When it is done mixing you want to let the mixer continue to knead the dough for 5 minutes.
When the dough is done kneading you want to place the mixing bowl in a warm place and cover it with a plate for about an hour.
When the plate pushes up it is time to turn out the dough.
Turn the dough out onto a lightly flowered cutting board. cut it into 3rds and shape into loaves. Place the loaves in oiled bred pans.
Place the loaves in a warm place and cover with a towel.
You want to let them rise about 30 minutes. Then you bake them in a 350 degree oven for 30 minutes.
When the bread comes out of the oven take it out of the pans and place on a cooling rack. Brush them with some melted butter. and then allow to cool.
This bread makes wonderful sandwiches. This is the bread I make all the time. So if you have gone home with a loaf of my bread this is the recipe. I also slice it up and put it in a gallon size zip bag and toss it in the freezer for later use. OF course around here if I don’t do that as soon as it is cool it is gone.

OK I did these for a friend who wants to learn to bake bread, but is unsure of where to start. I know your fear! I was so afraid to try. I haven't tried rolls yet. I keep saying I am going to, but I am afraid they wont turn out! I am going to try rolls this week now. I am also going to try using fresh pumpkin instead of canned pumpkin! It is time to break out of those comfort zones!
